Japan alone consumes so much sushi that it creates a $4 billion dollar industry annually, but of course this comes as no surprise as they are the Mecca of sushi. However to help with such increasing demand several restaurants have resorted to offering mass produced, automated sushi production in lieu of the traditional format. Conveyor belts strategically snake around seating areas and efficiently deliver food to customers as quickly as possible. All dishes and food items are tracked from start to finish to identify buying habits, trending food items, and production times. Certainly not the Jiro Dreams of Sushi quality, but these mass produced facilities still fill a need for cheaper and casual dining.
